This type of operation, is carried out by the APA of Arezzo, which is responsible for checking the product so that the directions of the Specification are followed.<\/p>\n<p><strong>The meat<\/strong>, as per genetics, turns out to be <strong>brightly colored<\/strong>, <strong>intensely flavored<\/strong>, with a good percentage of candid <strong>fat<\/strong>.[\/vc_column_text][\/vc_column][\/vc_row][vc_row content_placement=&#8221;middle&#8221;][vc_column width=&#8221;1\/2&#8243; css=&#8221;.vc_custom_1574943108428{padding-right: 2px !important;}&#8221;][vc_single_image image=&#8221;222&#8243; img_size=&#8221;full&#8221; alignment=&#8221;center&#8221; css=&#8221;.vc_custom_1574943041756{margin-bottom: 0px !important;}&#8221; el_class=&#8221;tre_px_margin_foto&#8221;][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text el_class=&#8221;padding-top-dieci-resp&#8221;]<\/p>\n<h3><span style=\"color: #51572a;\"><em>Preparation<\/em><\/span><\/h3>\n<p>The Specification, <strong>following the traditional recipe<\/strong>, stipulates that pork legs, slaughtered in the winter period from October 1 to March 31 and after refrigeration for at least 24 hours, are trimmed, massaged and salted.<\/p>\n<p><strong>Salting<\/strong> mixture is prepared with salt, garlic, and, if desired, other spices (pepper, chili pepper, nutmeg, and ground juniper). After five to seven days, residual salt is removed from the surface and massaged again.<\/p>\n<p>This is then followed by a <strong>second salting<\/strong>, which lasts for about two weeks. The <strong>Specification<\/strong> is dual, meaning that it covers both pig breeding and thigh processing, and therefore goes to monitor all the cycles of the supply chain: from breed identification, free-range breeding, pig feeding to meat processing and curing.<\/p>\n<p style=\"text-align: center;\"><strong>CASENTINO HAM IS A REGISTERED
