SEASONING
It is put to mature in well-ventilated rooms for an optimal period of about three to four months.

The whole piece is about 3/4.5 kg.
INFORMATION
WHITE PIG ROLLED PANCETTA is obtained from the belly of the pig properly trimmed.
The piece is salted in a tanning mixture of Tuscan salt and spices for several days.
Once removed from the marinade, rolled, stuffed into a natural casing, hand-tied, the Rolled Pancetta, marked with red twine, is placed for seasoning.
Rolling the piece, allows for a soft and hydrated texture while still maintaining the characteristics of bacon and adding intense flavors given by the spices.
Available in aromatic fennel or chili pepper versions.
THE NATURALLY PROCESSED PRODUCT IS FREE OF DYES AND PRESERVATIVES.
